Ingredients
  

  • 3 –4 medium purple sweet potatoes peeled and cubed
  • 1/4 cup red onion finely chopped
  • 1/2 cup celery diced
  • 1 avocado cubed (optional)
  • 2 tablespoons fresh parsley or cilantro chopped
  • 1 –2 boiled eggs sliced (optional)
  • Salt and pepper to taste

For the dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions
 

  • Boil the sweet potatoes: Place the cubed purple sweet potatoes in a pot of salted water. Boil until fork-tender (about 10–15 minutes), then drain and let cool.
  • Prepare the dressing: In a small bowl, whisk together olive oil, lemon juice, mustard, and honey. Season with salt and pepper.
  • Assemble the salad: In a large mixing bowl, combine the cooled sweet potatoes, onion, celery, avocado, and parsley. Drizzle the dressing over the top and gently mix to coat.
  • Garnish with sliced boiled eggs or additional herbs if desired.
  • Serve chilled or at room temperature.
