Ingredients
  

  • 1 bunch collard greens washed and chopped
  • 1 can coconut milk 13.5 oz
  • 2 tbsp Thai red curry paste or green
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 tbsp oil
  • 1 tbsp soy sauce or tamari
  • Juice of 1 lime
  • Fresh cilantro or Thai basil for garnish

Instructions
 

  • Heat oil in a pan, sauté onion, garlic, and ginger until fragrant.
  • Stir in Thai curry paste and cook for 1 minute.
  • Add coconut milk and soy sauce, bring to a simmer.
  • Add chopped collard greens and cook until tender (8–10 minutes).
  • Squeeze in lime juice and garnish with cilantro or Thai basil.
